Healthy Recipes for the Holidays: Apple Fritters

  • 1 cup all-purpose flour
  • ¾ teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoon canola oil
  • ¾ cup diced apple
  • ½ cup unsweetened applesauce
  • ¼ cup milk
  • 1 cup and 1 ½ teaspoon granulated sugar
  • 1 teaspoon vanilla extract

1. Begin by preheating your oven to 350 degrees. Insert mini-muffin or cupcake liners into a muffin pan or lightly coat with cooking spray.

2. Combine flour, salt, baking powder, and diced apple in a large bowl.

3. Combine the applesauce, oil, milk, ¼ cup sugar, and vanilla extract in a separate bowl. Gradually add the wet ingredients into the dry.

4. Drop batter into the prepared muffin tin. Use the remaining sugar to sprinkle on top of the batter.

5. Bake for 12 to 14 minutes. Allow the muffins to cool in the pan for 3 to 5 minutes, before transferring them to a rack to cool.
